A Simple Chocolate Cupcake Recipe

A Simple Chocolate Cupcake RecipeThe Great British Bake Off has inspired so many people to get baking at home, and I am included in that. I decided to make chocolate cupcakes (for the kids, of course!). They turned out great, so I thought I would share the recipe.

I can guarantee that this recipe for chocolate cupcakes will make you incredibly popular amongst your family and friends – if you don’t eat them all first!

Ingredients

Cupcakes:

  • 100g plain flour
  • 20g cocoa powder
  • 140g caster sugar
  • 5tsp baking powder
  • Pinch of salt
  • 40g unsalted butter
  • 120ml whole milk
  • 1 egg
  • ¼tsp vanilla extract

Buttercream:

  • 110g butter softened
  • 170g icing sugar
  • 55g cocoa powder, sifted
  • 1-2 tbsp milk

Method

  1. Preheat the oven to 170C/325F/Gas 3.
  1. Put the flour, cocoa powder, sugar, baking powder, salt and butter in a bowl. Using either a free-standing or hand held mixer, beat until combined.
  1. Mix the milk, egg and vanilla extract, then slowly add half to the flour mixture. Mix on a high speed too get rid of any lumps, then it turn down before adding the rest of the milk mixture. You’ll want to end up with a smooth batter – but be careful not to over mix.
  1. Spoon the mixture into the paper cases and bake for 20-25 minutes. Leave the cupcakes in the tray until they are cool enough to handle, then remove them to cool completely.
  1. For the buttercream, beat the butter until soft. Add half of the icing sugar, mixing until smooth. Add the remaining icing sugar, cocoa powder and one tablespoon of the milk and beat until creamy, adding more milk if too dry.

It’s up to you how you chose to decorate your cupcakes. Some people like to keep it simple and just pipe on the buttercream. Others like to indulge their sweet tooth and top with some chocolate buttons or flakes too! However you serve them, it’s guaranteed that they’ll taste incredible.
