Blueberry cream cheese muffins are a delicious snack or desert to eat. It is also a very helpful dish because of the antioxidants that are in the blueberries. In fact, researchers found that blueberries may reduce cancer tumors if eaten regularly. The following is the ingredients that are needed to create this meal;
Ingredients: 2 cups cake flour
1-1/2 teaspoon of baking powder
3/4 cup of granulated sugar
1/2 teaspoon of baking powder
3 ounces of cream cheese (cubed)
2 teaspoons of lemon juice
2 teaspoons of vanilla extract
1/2 cup of milk
2 whole eggs
1/4 cup of melted butter ( hot)
1 cup of blueberries

Preparation: Put oven rack to middle position and preheat the oven to 350°. Line the cups of a muffin tin with 12 paper liners. Set aside.
Mix sugar, flour, baking powder,soda, and salt in a mixing bowl. Whisk or stir to blend well until no lumps are found.
Using your food processor, process the cream cheese, lemon juice, and vanilla until smooth. Add the eggs and process for about 15 seconds. Scrape down the side of container with a spatula. With the processor running, pour hot melted butter through the food gradually, for about 10 seconds. Process another 10 seconds. Add milk and process 5 seconds. Add the dry ingredients to the container and mix with 4 to 6 half-second pulses. Add the blueberries and fold in with a spoon. Pour an equal amount of batter into each muffin cup, filling each about 2/3 to 3/4 full. Bake in preheated 350° oven for 30 minutes. Cool on rack a for about 15 minutes.
