Asian chicken curry is very popular around the world. This fragrant chicken and kumara curry is one of the favourite weeknight dinner recipes. ‘Kumara’ is also known as ‘sweet potato’ and is a staple in New Zealand. The versatile root vegetable goes particularly well in this Asian-inspired curry. The chicken and sweet potato are poached in a mixture of coconut milk, infused with tumeric, curry powder and fragrant lemongrass and cilantro. This chicken recipe is very rich in aroma and flavour.

The ingredients may vary because of the different chicken recipes’ rendition. It is also dependent on how many people you want to serve. In a case where you want to serve 4 to 5 people, here are the ingredients. You need 5 boneless and skinless chicken thighs, 2 tablespoons of canola or vegetable oil, 1 medium white onion, quartered, 3 crushed garlic cloves, 1 lemongrass, 1 teaspoon ground tumeric, 1 teaspoon curry powder, ½ teaspoon chilli powder, 1 medium sweet potato cut into 2 centimeter cubes, 1 can of coconut milk, ½ cup of water, 2 tablespoons of Thai fish sauce, ½ teaspoon of sugar, a handful of chopped cilantro, a cup of basmati rice.

To prepare the chicken recipe, cut the chicken thighs into strips or chunks. Place the rice along with 2 cups of water in a medium saucepan then bring it to a boil over high heat. Cook the rice for 10-12 minutes. Heat the oil on medium heat and partially brown the chicken for about 1-2 minutes. Set aside the chicken after. Work on onion for 2 minutes until it is translucent. Add oil if the wok is dry. Add the garlic and fry for about 30 seconds. Add the lemongrass and fry for another 30 seconds. Now, add the tumeric, curry powder and chilli powder and fry for 1 minute. Add the sweet potato and sugar. Make sure to stir it well then add the coconut milk, water, fish sauce and cilantro. Bring it to a boil. If the mixture is in a boil, add the chicken and then turn the heat down to low and cover. Simmer gently for 20 minutes. It should be ready to serve after the time is set.
