Greek Styled Sherry Trifle


Would you believe that a traditional English pudding can become a traditional Greek pudding, well here it is. This Sherry trifle can be created some days before the day of eating and then it can be finished with the cream and the almonds. Don’t worry after three or four days in the fridge it is still delicious.

  • 200gr Swiss role, cut into 1cm thin slices
  • 1/2 packet Amaretti biscuits
  • 250ml sweet sherry
  • 3 tablespoons cognac
  • 200gr fresh berries
  • 1 packet rasberry jelly
  • 2 tablespoons custard powder
  • 2 tablespoons caster sugar
  • 425ml fresh milk
  • 350ml double cream
  • 50gr toasted flaked almonds
  • 1 lemon, juice only
  • 2 oranges, grated zest only
  • 12 large strawberries, cut in half

Lay the Swiss roll and biscuits in the base of a deep glass dish.

Spoon over 1/2 the sherry and half the brandy and leave to soak for a few minutes.

Arrange all the fruit over the Swiss roll slices. Only use half the strawberries.

Sprinkle half the almond flakes on top of the fruit.

Make up the jelly by following the instructions on the pack.

Then pour over the Swiss roll until the fruit is covered. Leave to set.

Mix the custard powder and 2 tablespoons of sugar with 2 tablespoons of milk until it has the constitution of a paste. Add the rest of the milk.

Then microwave for 5 minutes. Stir it after 2 minutes. Leave to cool. Then pour onto the set jelly.

Place the remainder of the sherry, brandy and lemon juice into a bowl and stir in the remainder of the sugar until it has dissolved.

Pour in the cream with a pinch of flaked almond. Whisk together using a wire balloon whisk until it holds its shape.

Spread the topping over the trifle and chill overnight.

Before serving arrange remainder of the cut strawberries, arrange half moon orange slices and scatter the remainder of the flaked almonds and grated orange over everything. Then serve.
