Peanut butter cookies are big a favorite of many people. They are a classic and if you have not had home-made peanut butter cookies then you are really in for a great treat. They have a charming,old-fashioned look made from using a fork to flatten down the dough. Here is a little cookie history for you – in the early 1930s peanut butter was first listed as an ingredient for cookies. A 1933 edition of Pillsbury’s Balanced Recipes ,by Mary Ellis Ames, includes a recipe for “Peanut Butter Balls”. The instructions are to roll the dough into balls and press them down with a fork. And that is still the classic way they are made to this day.
When I was a child my family made these and I remember them fondly.This easy cookie recipe will make everyone happy. It makes about 4 dozen cookies. This recipe is easily doubled if you want to make more.The cookies are great with a large glass of cold milk.
1 cup packed brown sugar
1/2 cup butter, softened
1/2 cup peanut butter
1 teaspoon vanilla
1 1/2 cups self-rising flour
1/2 teaspoon salt
Heat oven to 375 degrees. Mix together the brown sugar, butter and peanut butter in large mixing bowl. Beat on medium speed until everything is mixed well. Then add the egg and vanilla, and continue beating with the mixer until well mixed. Reduce the speed to low , next add the flour and salt. Mix together well.
Shape the cookie dough into 1-inch balls, or make them a little larger if you prefer bigger cookies. Roll the balls of dough in the sugar. Place them about 2 or 3 inches apart on an ungreased cookie sheet. Flatten the balls by making a criss-cross pattern with a fork dipped in sugar. Don’t push the fork in too hard or you’ll go all the way down through the dough.
Bake for 8 to 10 minutes or until edges are lightly browned. Bake longer if you prefer them more well-done.
