Peanut Butter Cookie Recipes Without Brown Sugar: Peanut Butter Cluster Cookies

This original recipe is flourless, contains no shortening, and uses white sugar instead of brown sugar as the sweetener.

You’ll just need four ingredients, which you probably already have in your pantry or refrigerator and a few minutes of your time. The hardest part of the recipe is waiting for the cookies to cool as they are rather delicate and need to rest on the cookie sheet until cool.

What You Need

  • 2 cups peanut butter of choice (creamy or crunchy)
  • 1 – 1/2 cups of white sugar
  • 1 – 1/2 cups dry roasted unsalted peanuts (use them straight from the container – do not chop)
  • 1 large egg
  • Cookie sheets
  • Parchment paper

What You Do

First, preheat oven to 360 degrees Fahrenheit and then line your cookie sheets with parchment paper.

  1. Cream the peanut butter and sugar together for about two minutes or until the mixture feels smooth and not grainy when rubbed with a scrupulously clean fingertip.
  2. Beat the egg vigorously and then add to the mixture, blending well.
  3. Using a knife or your hands, mix the dry roasted peanuts into the mixture.
  4. Grab a handful of the dough and shape into a ball about the size of a golf ball (see photo below.)
  5. Place the dough balls onto the prepared cookie sheets and flatten them into a circle shape with the palm of your hand or the bottom of a glass.


(Tip: dip the bottom of the glass into flour and then press it onto the dough balls.)

Bake for about 14 to 15 minutes or until edges are slightly brown. Watch these cookies carefully because they burn easily. Cooking times will vary depending on the size and thickness of the cookies. Test cookies were approximately 3 1/2 inches in diameter.

Remove the baking pans from the ovens and let the cookies cool completely before removing them.


Tip: These cookies crumble easily when hot, but if you just can’t wait to have a bite, spray a spatula with your preferred brand of non-stick spray and slide it gently under the cookie. Transfer the cookie to a plate or paper towel, and pop it into the freezer for about 60 seconds. The cookie will cool enough to hold its shape while you eagerly devour it.
