If you are cooking fish the advantage of using a butter marinade is it helps to stop the fish from drying out.

When marinading fish the longest you should leave it to marinade is 30 minutes. If you leave the fish any longer than that in the marinade, it will start to cook.

Quick marinades for fish


2 teaspoons lemon juice
Grated rind of one lemon
1 teaspoon honey
110g butter

Mix the lemon juice, rind and honey into the soften butter. Place in a dish and refrigerate until set. When cooking your seafood place a spoon of the butter mixture on the fish to flavor.


Juice and zest of one lemon
15g Chopped parsley
2 cloves of crushed garlic
110g butter

Add the lemon zest and juice along with the chopped parsley and the crushed garlic cloves into a bowl containing the softened butter. Mix all the ingredients together really well. Place the butter mixture in cling film and shape it into a cylinder shape. Place this in the refrigerator to set. Once set you can cut out circles of butter to place on the fish as it is cooking.


Juice and zest of on lemon
4 teaspoons of soy sauce
2 tables spoons of honey

Place the lemon juice and zest in a bowl and mix. Add the soy sauce along with the honey and stir well. Place this mixture on top of the fish. This mixture will harden and allow a crust to form on the fish.


Small tub of natural yogurt
1 Small red onion
2 Cloves of crushed garlic
Pinch of curry powder
Chopped coriander

Pour the tub of yogurt into a bowl. Now chop up the onion finely and add this to the mixture along with the crushed garlic cloves. Add the pinch of curry powder and stir. Finally add the chopped coriander to the mixture and give it a final stir.
